Salad Rolls

Ingredients:
1/2 cup sliced boiled pork
1/2 cup cooked shrimps, shelled and deveined
1/2 cup bean sprouts
1/2 cup cooked rice noodle
mint leaves, red mint leaves
rice paper for wrapping
water (either in a bowl or in a spray bottle) to moisten rice papers
Sauce for dipping
1/4 cup Hoisin sauce
3 Tablespoons chunky peanut butter
1 tablespoon vinegar
1/4 cup water
chopped peanuts (optional)
ground chili pepper (optional)
pickled shredded carrots
using a spray bottle to spray water over rice paper . Let it sit for a minute so it can get pliable, place couple mint leaves, both read and green on paper, then some bean sprouts then rice noodle, on top of rice noodle, place couple shrimps and pices of sliced pork. Making the roll by folding the top of paper over teh filling, roll one time, fold two ends over and continue rolling till the end. Make 6 rolls , dip in sauce when eating.
Mix hoisin sauce ith peanut butter, vinegar and water. Cook over medium heat, stir frequently until smooth. Remove from heat. Add chopped peanut, pickled shredded carrots and chili pepper.
